酸菜肉丝汤

原料
酸菜---------150克
猪瘦肉-------100克
粉丝---------15克
香菜---------15克
海米---------10克
调料
精盐---------1小匙
味精-------1/2小匙
花椒水-------2小匙
料酒---------1小匙
熟猪油-------2大匙
高汤--------1000克
制作步骤
1 猪瘦肉剔去筋膜,洗净,切成5厘米长的细丝;香菜去根和老叶,洗净,切成小段。
2 粉丝用温水泡软,洗净,剪成长段;海米用温水涨发;酸菜去根、去老帮,用清水浸泡并洗净,切成细丝,再放入清水盆内清洗两遍,捞出,攥干水分。
3 锅置火上,加入熟猪油烧至七成热,放入猪肉丝炒至变色,再烹入料酒,加入高汤、酸菜丝、粉丝和精盐稍煮片刻。
4 然后放入海米,用旺火烧沸,转小火煮约6分钟,最后淋入花椒水,加入味精,盛入汤碗内,撒入香菜段即成。
